Close your eyes for a second. Imagine opening an ancient stone door. The air that comes in smells of wood, of aromatic herbs, of something that is about to happen. You are in a farmhouse built entirely of stone — each block laid by hand, one by one, by farmers who knew no other technique than that of patience and real work, when Sicily was in no hurry and every meal was a ritual.
Today, you're experiencing that ritual.
On the table in front of you are artisan bread, extra-virgin olive oil from centuries-old olive trees, tomatoes that still taste of sunshine, cheeses from a shepherd in this valley, and traditional Sicilian country-style sauces and creams. Nothing industrial. Nothing generic. Everything has a name, an origin, a story.
Take whatever you want. Compose, assemble, taste. There are no recipes to follow, there is no instructor to correct you. There is only the freedom to do with your hands what the Sicilians have always done: eat well, with what the land offers.
While you work, Adriano, the oenologist and soul of the company, uncorks the bottles. He tells you where those grapes come from, at what altitude they grow, and why that wine tastes the way it does. It's not a lesson. It's a conversation between the person who makes the wine and the person who is about to drink it for the first time, really understanding what's in the glass.
Outside the window, the organic vineyards of the Jato Valley stretch up to the mountains. The same landscape you walked through a little earlier, among the rows, breathing in the unique microclimate of this land. Now that landscape is in your glass.
You eat what you have prepared. You drink wines born from the very land beneath your feet. You hear stories that no tour guide has ever written.
This is not an activity to check off on an itinerary. It's the kind of afternoon you tell about when you go home, the one where you really understood what Sicily is.
